Honeycarmelcutie asked, " where do I get protein? Can anyone tell me about

Seitan? "

New vegetarians often worry about protein. Relax and know that most

vegetables have protein, even potatoes. Do you have a Whole Foods near you?

If so, look at the signs in the produce section and you will see the protein

contents listed. You may be surprised. Actually, SAD (standard American

diet) eaters ought to worry about getting TOO much protein. Check out this

article from the Physicians Committee for Responsible Medicine -

http://www.pcrm.org/health/veginfo/protein.html.

Other than nuts, which you said are a problem for you, you can find enough

protein in beans and legumes (lentils are especially high in protein), tofu,

tempeh, seitan, dark green leafy vegetables, sprouts, mushrooms (not really

vegetables, but fungi), and whole grains. If you want higher protein

snacks, try soy chips or crisps, or tofu jerky.

Seitan is wheat gluten. I use it a lot, but is obviously not a good choice

for anyone allergic to gluten. Whole Foods and other health or whole food

stores carry prepared gluten, which you can find in the refrigerated section

with the water packed tofu or in the freezer section. White Wave

chicken-style seitan is really good. You can easily make your own seitan:

buy vital wheat gluten powder (comes in a box or package) and follow the

written directions. Vegetarian cookbooks by people like Joanne Stepaniak

have recipes for making seitan/gluten and dishes with seitan.
