Im looking to male the transition to a vegetarian lifestyle so any and all help would be appreciated! Also, Im in the process of losing weight...but I have a severe nut allergy so where do I get preotein? Can anyone tell me about Seitan? Thanks! Relax and know that most vegetables have protein, even potatoes. Do you have a Whole Foods near you? If so, look at the signs in the produce section and you will see the protein contents listed. You may be surprised. Actually, SAD (standard American diet) eaters ought to worry about getting TOO much protein. Other than nuts, which you said are a problem for you, you can find enough protein in beans and legumes (lentils are especially high in protein), tofu, tempeh, seitan, dark green leafy vegetables, sprouts, mushrooms (not really vegetables, but fungi), and whole grains. If you want higher protein snacks, try soy chips or crisps, or tofu jerky. Seitan is wheat gluten. I use it a lot, but is obviously not a good choice for anyone allergic to gluten. Whole Foods and other health or whole food stores carry prepared gluten, which you can find in the refrigerated section with the water packed tofu or in the freezer section. White Wave chicken-style seitan is really good. You can easily make your own seitan: buy vital wheat gluten powder (comes in a box or package) and follow the written directions.
