I always substitute butter or margarine with Earth Balance Buttery Sticks and any dairy products with non-dairy products. This brings the fat and cholesterol way down, and makes the dish much more healthy. So while my recipes state butter or margarine, cheese, and milk -- I do not use any of those ingredients.
