Guest guest Posted December 21, 2006 Report Share Posted December 21, 2006 Bulgur Wheat Salad 1 medium onion fine chopped 1 cup chopped broccoli 1 cup shredded carrots 1 small pepper chopped 1/3 cup fresh parsley chopped 1 teaspoon oil or Pam Spray 1 1/2 cups dry bulgur 2 cups veggy broth 8 oz. drained chickpeas 1. Heat oil in skillet add onions until soft. 2. Add dry bulgur just to coat then add veggie broth and lower heat after it begins to boil. add the rest of the veggies and chickpeas and cook until the liquid is absorbed. 3.
