Here are two recipes, that I think of as suitable holiday fare, plus they are festive looking, with red and green bits showing. Angel's Texas Black Bean " Caviar " 2 cups drained cooked black beans, rinsed (about 1 16 oz. Can) 1 cup onion chopped 1 red bell pepper, seeded and chopped 2 pickled jalapenos, chopped medium fine 1 clove garlic, finely chopped 1/3 cup red wine vinegar 1 ½ tablespoons sugar 1 teaspoon chili powder ¾ teaspoon dried savory ½ teaspoon ground cumin ½ teaspoon salt ¾ teaspoon freshly ground black pepper ¾ teaspoon cayenne ¾ teaspoon white pepper 1 tablespoon lemon juice In a bowl, combine the beans, onion, red pepper, jalapenos, and garlic. In a medium-sized non-reactive saucepan, combine the vinegar, sugar, chili powder, savory, cumin, salt, black pepper, cayenne and white pepper. Bring to a boil over medium high heat, stirring to dissolve the sugar. Add the black beans mixture, bring to a boil, stirring frequently, and simmer for 1 minute. Remove from the heat and stir in the lemon juice. Transfer the mixture to a bowl and refrigerate until cold, about 1 hour. (Can be made 4 days ahead and kept refrigerated.) Serve cold or at room temperature. Good as a dip on crackers. Party food! =================================== Tofu and Kale Quiche From the “Holiday Vegan Cuisine” insert of the December 1998 IPBN Newsletter Recipe for one pie; serves 4 to 6. It is easier to make 2 at a time since tofu comes in 16 oz. Packages. Preheat oven to 350 degrees. ½ tsp canola oil ½ cup chopped green onions 8 oz firm tofu, crumbled 8 oz soft tofu, crumbled 1 cup packed finely chopped kale or turnip greens 1 cup grated soy cheese ½ cup chopped red bell peppers ½ tsp salt ½ tsp turmeric 9-inch (22.5 cm) store-bought pastry pie shell 1. In a small non-stick skillet, heat oil over medium heat. Add green onions and saute for 3 minutes. Add remaining ingredients to skillet and mix together until cheese begins to soften and kale wilts slightly. 2. Transfer mixture to prepared pie shell (see package instructions). I didn't have time to try out the recipes beforehand (a couple of them had ingerdients that I'd never heard of and there was a cooking term I hadn't heard either) so I went for some really easy salads. Chickpeas with red and green capsicum and light French Dressing Tabouli (with red capsicum not tomatoes) Potato Salad (not sure how this one rates on the kilojoule scale?)
