Guest guest Posted November 9, 2006 Report Share Posted November 9, 2006 * Exported from MasterCook * Southwest Vegetarian Bake Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Vegetarian dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup brown rice -- uncooked 1 1/2 cups water 1 can Black Beans ( my entry) -- rinsed and drained 1 can mexicorn -- drained 1 10 ounce can diced tomatoes and green chilis 1 cup salsa mild 1 cup sour cream, light 1 cup cheddar, fat free 1/2 cup red onion -- chopped 1 can ripe olives -- sliced 1 cup Mexican blend cheese, reduced fat In large saucepan, bring water and rice to boil. Reduce heat, cover, simmer for 35-40 minutes until tender. In large bowl, combine beans, mexicorn, tomatoes, salsa, sour cream, cheddar cheese, pepper and rice. Transfer to 2 1/2 qt baking dish coated with non stick spray. Sprinkle with onions and olives Bake uncovered at 350 degrees for 30 minutes. Sprinkle Mexican cheese and bake 5-10 mintes longer or until melted. Let stand 10 minutes before serving.
