Guest guest Posted October 3, 2006 Report Share Posted October 3, 2006 Stuffed Acorn Squash " The Compassionate Cook " 3 acorn squash, sliced in half, seeds removed 2 T margarine (can be omitted) 2 T water 1 small onion, finely chopped 2 stalks celery, finely chopped 2 medium apples, peeled and finely chopped 1/4 cup pure maple syrup (could use less) 1/2 cup raisins (opt. I don't use them) 1/4 - 1/2 t of each: parsley, sage, rosemary, and thyme salt and pepper to taste 1 pkg vegan cornbread stuffing Preheat the oven to 400°. Brush the insides of the squash with melted margarine (if you are using), and set aside. Heat the 2 T of water in a saute pan, cook the onion, celery, and apple for about 8 minutes. Then add the maple syrup, raisins (if using), herbs, salt and pepper. Mix well. In a large bowl, mix the cornbread stuffing and the vegetable mixture. Spoon into each squash half, cover with foil, and bake about 40 - 45 minutes or until squash is tender. Can serve with gravy if you wish.
