It is tough being the only veg, I have experienced that a few times myself. One thing that helps is learning yummy recipes. When I lived in that situation (my husband now eats what I make even though he is a omnivorous) I would make a vegan meal, tasty and wonderful, then on the " side " I would make a small amount of the desired meat, and I used one skillet for it's prep. I never use that for my food. I found the more interesting " my " food was, the less the meat became the centerpiece. Eventually I was able to make a few veg/vegan meals a week. Favorites such as pasta dishes are always a hit, lasagna, casseroles, etc... these things usually go over very well with meat eaters. I wish you much success and welcome!
