Hi Katie,

 

The spinach lasagna I made was one I was trying to adapt from a no

bake manicotti recipe. I changed up the amount of ingredients the

recipe called for and don't feel I have it quite perfected yet.

Basically what I used was almost a whole large package of regular

lasagna noodles (uncooked), 2 lg cans spaghetti sauce (one of them no

sugar, the other regular of a vegetarian choice, of course) about 1

1/2 cups added water to the two cans of sauce, 24 oz container no fat

cottage cheese, 10 oz frozen chopped spinach thawed and drained, 1/2

cup eggbeaters, 16 oz lowfat mozzarella shredded, 1/2 cup of the

lowfat parmesan powder...plus onion powder, garlic powder, a little

cayenne powder, salt and pepper. I assembled this in a huge lasagna

pan covered with foil and let it sit overnight, then set it out about

an hour before cooking time the next day and then cooked it covered

about 45 minutes and then took the foil off and finished cooking it.

What I ended up with was pretty good--maybe a tad on the dry side,

not really ready to write up into a recipe yet...LOL! But I have to

say that I sure enjoyed having it as leftovers all these many days

from last Wednesday (the night my son comes to eat with us)!

 

I'm thinking next time I make it, I'm going to add another package of

spinach and some canned mushrooms with the mushroom juice added to the

extra water for the spaghetti sauce--also the spinach water added. I

promise to post a recipe for it if I ever get it right!

 

Meanwhile I'm really enjoying seeing what all you guys are having for

lunch (and breakfast and dinner). Getting lots of good ideas!

Hi Paula,

I most definitely want this recipe sounds perfect to me now but you know best

and I will patiently wait for your approved version.

Just wondering how much would a serving size be? As I have said I do not

honestly know portions at all but I am slowly learning so I really love it when

the portion measurement is included (if possible that is).

I bet this would freeze well too.
