You really do have to cook creatively to enjoy and reap the benefits of a vegetarian lifestyle. Now I've pretty much cut out all processed foods and my diet consists mainly of beans, seeds, nuts, whole grains and vegetables. I eat very little dairy except for some cheese and yogurt once in a while and no eggs other than egg beaters for baking. I always have to smile when people say " but what do you eat? Before I could even open my mouth to respond, a (non-vegetarian) colleague retorted, " Do you find heterosexuality limiting? I have to still experiment more with making dressings. I see the files have some good recipes.
