these veggie patties with short grain brown rice, shredded zucchini, garlic,

salt, pepper, an egg, brown rice flour, parmesan cheese, tofu and ricotta

cheese.

I mixed it all together and dropped patties in olive oil. They are so yummy!

Even my 8 year old asked for seconds.

When I think back, I ate meat, a vegetable and a starch, every night! We

have really opened up our eyes!!!

Do you find yourselves " creating " stuff????

I went through a phase years ago where I ate a lot of veggie burgers or

frozen dinners, but you can only do that for so long before it gets boring. You

really do have to cook creatively to enjoy and reap the benefits of a vegetarian

lifestyle. Now I've pretty much cut out all processed foods and my diet

consists mainly of beans, seeds, nuts, whole grains and vegetables. I eat very

little dairy except for some cheese and yogurt once in a while and no eggs other

than egg beaters for baking. I always have to smile when people say " but

what do you eat? "

This sounds yummy, Christene!

As to your father's comment.... Years ago I was at a work lunch and

someone said that to me. Before I could even open my mouth to respond,

a (non-vegetarian) colleague retorted, " Do you find heterosexuality

limiting? " I LOVED him for that comeback! :-)

I'm also a great creator in the kitchen. Mainly it's with salads and

what I can toss into the salad bowl. I have to still experiment more

with making dressings. I see the files have some good recipes.
