I've been quietly increasing the number of vegetarian meals that I personally eat over the last few months, but I'm not quite all the way there, and my husband and other daughter are definitely NOT vegetarians. So I'm hoping to get some tips and suggestions from you on how to help myself and my daughter. Fortunately, she really likes beans and nuts and she doesn't want to give up dairy, so I think she'll be able to do this healthfully. I have a few specific questions: What are the current medical opinions about soy and children? Do the bean-complementary grains have to be in the same meal or just over the course of the day? What are good lunchbox ideas? Any good bean dip recipes...she doesn't really like hummus. Any other tips you have would be really appreciated, especially on ways to have quick, ready to eat vegetarian options available in the fridge. Thanks!
