Guest guest Posted August 18, 2006 Report Share Posted August 18, 2006 Speaking of rennet in cheese, the Trader Joe's chain has a brochure (available at their stores and on line at http://www.traderjoes.com/products/brochures/EC_rennet.pdf (East Coast and Midwest) and http://www.traderjoes.com/products/brochures/rennet_west.asp (West Coast) which talks about the different types of rennet (animal, vegetable and microbial) and lists which of the cheeses they sell contains which type. I have found this to be very useful. Vegetarian rennet is sometimes called rennin.
