I am so impressed by the variety of people in this group and the

genuine concern for finding good answers. When I joined in a week

or so ago I mentioned some of the foods I have really depended on

these last 6 months of veggiedom. I was asked to share them. I

would like to do that. I saw the note from someone who has

substituted bread and rice for meat and has gained weight. I depend

mostly on beans and haven't gained but haven't lost the weight I

expected to. I'm sure fat and sweets are to blame. I don't care

how wholesome olive oil or date " sugar " are. Too many calories are

too many calories! I bought my first tub of tofu today! I'll let

you know how I do! Here are the three recipes that I have developed

and depended on these last few months. Let me know if you try them

and what you think of them.

 

Debbie's Bran Flax Muffins

1 1/2 Cups White Whole Wheat Flour

3/4 Cups Flaxseed Meal

3/4 Cups Wheat Germ

1 Cup Succanat

2 teaspoons Baking Soda

1 teaspooon Baking Powder

1/2 teaspoon Sea Salt

2 teaspoons Cinnamon

1 1/2 Cups Shredded Carrots

1 Cup Chopped Almonds

1/2 Cup Unsweetened Applesauce

1 Cup Light Vanilla Silk soy Milk

1/4 cup All Whites 100% Egg Whites

1 teaspoon Vanilla Extract

 

Put first 8 ingredients in large mixing bowl and stir with large

whisk to mix well. Stir in carrots and almonds with wooden spoon.

In small bowl mix together last 4 ingredients. Add this wet mixture

to the dry mixture and stir well to mix with wooden spoon. Spoon

into 15 foil muffin cups.

 

Debbie's Vegetable Bean Soup

2 Cups of Cooked (per package directions except for meat)15 Bean

Soup Beans

1 can (14.5 oz.) diced Tomatoes (try the ones with green chilies if

you like spicy)

2 Cups water

1/2 Cup dry Barley

2 Cups frozen Vegetable Soup Mix (I like the one with the okra)

3 Tablespoons Minced Spice World Garlic

1 Cup Chopped Frozen Spinich

4 Tablespoons Extra Virgin Olive Oil

 

Add tomatoes, water, and barley. Bring almost to a boil and then

turn heat to low and cook 15 minutes. Add all other ingredients.

Bring almost back to a boil and turn heat to low and cook 15 minutes.

Add salt, more garlic, or more olive oil to taste.

 

Fruit and Protien Shake

 

1 cup Tropicana Calcium and Vitamin D Orange Juice

1 Cup Vanilla Light Silk soymilk

1 Cup Fozen Berry Medley

1/4 Cup All Whites 100% Egg Whites

 

Blend all ingredients in a blender until smooth. My sister likes to

add some sweetner, although I like it just fine this way.
