Here's the lentil spice cake. I didn't get fancy

and make it two-layered like she did, but it was

delicious. I brought it to a family dinner and

only revealed the secret ingredient after everyone

had given their kudos. :)

The site mentioned looks wonderful - is vegan too, which should please just

about

everybody ;-)

BUT please remember that being vegan does not necessarily mean suitable for

slimming

(or weight loss) just as being fat-free doesn't mean that either. Sugars in

various guises,

refined flour, etc., are not recommended as part of a healthy slimming diet.

Pity, that.

It's best to save the recipes mentioned for taking to the homes of friends and

family,

leaving on doorsteps, carrying to potluck suppers, whatever. There. I've said

it. (looked

really really good, though, didn't they????? Yum!)

Best love, Pat (who has just rained on this lovely parade - sorry! <kicks self

under the

table>)

I agree Pat. I'm in another vegetarian group and they post a billion recipes

but as I'm looking through them, I'm thinking, wow, these sound so heavy! We've

been really focusing on certain types of recipes from our own stock of

cookbooks. It shocks me sometimes to see recipes with lots of butter, starchy

items, etc.

One of the girls I work with doesn't eat a lot of meat, but doesn't eat very

well. While I'm bringing in left over homemade meals, she's eating top ramen,

spagghetios type meals. Having made a conscious decision to become a healthy

eating vegetarian, I notice those types of things now.
