It's one of those things that has just evolved through the years and I do by instinct. I have made the corn tortillas out of the masa harina before with a tortilla press. Kind of fun to do, especially with kids. I have made the bean enchiladas with the flour tortillas available to you, and they are great, too. The flour tortillas are a lot easier to roll up, also. I have been trying to find a good non dairy cheese substitute. I've been considering trying some of the nutritional yeast cheese, and have found several recipes. The tofu you mention sounds interesting. Does your recipe call for the silken tofu?
