Recipe: Tofu with Aubergine

In charge of the kitchen for 2 weeks, hereby the first result of my efforts!

Serves 4.

 

1/2 block tofu

1/2 aubergine

1 onion

a few cloves garlic

sambal oelek

ketjap manis

1 chinese leaves

2 sticks celery

1 tomato

 

Wash and dice the tofu and fry in oil. Meanwhile finely chop the onion and

garlic, slice the celery into thin slices and dice the aubergine, stir fry

everything together and add the tofu. Then add the sliced tomato, a few

chinese leaves and sambal and ketjap to taste and cook together for a while.

 

Serve with rice and cooked vegetables e.g. bean sprouts and the rest of the

chinese leaves.
