Jane said that she substituted 1/2 cup freshly ground flax for

1/2 cup corn meal. Adding ground flax is like adding more eggs (egg

substitute). It would make the recipe hold together better. An even

richer flavor would be obtained by adding a lesser amount of soy

lecithin which adds a yolky kind of taste. (I am one of those reformed

carnivores and I am ever trying to replace tastes I miss while keeping

recipes healthy and compassionate.)
