Guest guest Posted February 18, 2006 Report Share Posted February 18, 2006 " Cooking Without Fat " by George Mateljan Mushroom-Marinara Sauce on Pasta prep time: 10 minutes cooking time: 25 minutes ingredients: 2/3 cup chopped onion 4 cloves garlic, chopped 1 cup sliced mushrooms 2-3 tablespoons vegetarian broth 2 cans (15 ounces each) no salt tomato sauce 3 tablespoon honey 2 teaspoons crushed dried oregano 2 teaspoons crushed dried basil pinch white pepper (optional) 1 tablespoon balsamic vinegar 12 ounces whole grain pasta, cooked 2 tablespoon chopped green onion (optional) directions: 1. In medium saucepan, cook onion, garlic and mushrooms in broth 5-7 minutes or until softened, over medium high heat. 2. Add tomato sauce, honey, oregano, basil and white pepper. Bring to a boil, reduce heat and summer gently for 20 minutes. 3. Add balsamic vinegar and simmer for additional 5 minutes. 4. Pour the sauce over cooked pasta and toss thoroughly.
