recipe for pancakes (was Boston Brown Bread)

Here is what I came up with this past week to get actual vegetables into

my 8 year old who hates them.

 

Pancakes

 

1 1/2 cups whole wheat flour

1/2 cup oat flour

1 small raw sweet potato, shredded

1 apple, grated

1/2 cup crushed pecans

2 teaspoons cinnamon

1 tablespoon baking powder

1/2 teaspoon salt

low fat almond milk

 

Combine dry ingredients well, toss with grated sweet potato and apple

and pecans until well mixed. Now the tricky part is to moisten the

whole thing enough. I used almond milk but you could use whatever you

have, rice milk would work well and if it was home made would make much

lower fat pancakes especially if you left out the pecans. I added milk

until I had a mixture that was moist but not runny. I put a spoonful of

mixture on the hot non stick griddle and had to flatten it out to about

3/8 inch thick to cook, flipping after the top started to look dry.

 

These were greatly enjoyed by both sons with peanut butter and maple

syrup - for weight loss you will want to omit the peanut butter and use

just a teensy bit of whatever sweetener you like. They really need

sweetening since there is no sugar in them. They are storing well in

the refrigerator separated by sheets of wax paper, we have been heating

them in the toaster for snacks.
