I love her cookbooks and make a lot of different recipes by her, including cheesy sauces and other stuff. I have found that I can refrigerate left-over uncheez sauce or fondue and it will thicken in the refrigerator. If I want to use it for sauce I need to thin it with water and heat it back up, but I can just use the leftover as a dip for crackers. I also buy uncheez, mainly Follow Your Heart cheeses which I can find at Whole Foods.
