I have been vegan for 12 years and dairy was the last food category I gave up. The substitute cheeses that are available to me certainly have progressed in the last several years. I usually buy mozzarella or cheddar. I'll never forget the first time I made pizza with the new melting cheese and I burnt my mouth. Every once in a while a get a craving for grilled cheese sandwiches and tomato soup. Boy, is that good. I think for me it's the texture of the melting cheese rather than the taste alone.
