Guest guest Posted February 19, 2002 Report Share Posted February 19, 2002 * Exported from MasterCook * Chick Pea Salad With Zucchini And Fresh Mozzarella Recipe By : Vegetarian Celebrations by Nava Atlas, page 228 Serving Size : 6 Preparation Time :0:00 Categories : Beans And Legumes Salads, Main Dish Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked chick peas 4 ounces fresh mozzarella* -- finely diced 6 ounces jarred roasted peppers with liquid -- up to 8 ounces cut into strips 1 small zucchini -- very thinly sliced 1 tablespoon olive oil 2 tablespoons wine vinegar -- to taste, up to 3 2 tablespoons chopped fresh parsley 1/2 teaspoon dried oregano salt and freshly ground pepper -- to taste *For a dairy-free alternative, use an equal amount of diced, very fresh tofu. 6 servings Serve this hearty salad on its own as a first course. I've recommended replacing the fresh mozzarella with tofu for those on a dairy-free diet. Combine all the ingredients in a serving bowl and mix well. Let stand at room temperature for 30 minutes to an hour before serving.
