Guest guest Posted February 19, 2002 Report Share Posted February 19, 2002 * Exported from MasterCook * Spicy Tomato Soup Recipe By :Barbara Cousins Serving Size : 4 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large onion 2 garlic cloves 1 tablespoon olive oil 1 large carrot 1 large zucchini 1 medium potato 2 1/2 cups passata (sieved tomatoes) 4 1/2 cups water or vegetable stock 1 teaspoon paprika (heaped) 1/4 chile powder (optional) -- or double 1 teaspoon dried oregano 2 tablespoons chopped fresh basil 1 tablespoon chopped fresh cilantro 1 tablespoon chopped fresh parsley salt and freshly ground black pepper 1. Dice the onion and crush the garlic cloves. Place in a saucepan with the olive oil and sweat them in the oil for a few minutes. 2. Grate the carrot, zucchini and potato and add to the onions. Continue to sweat the vegetables, stirring occasionally, until they are beginning to soften and brown. 3. Add the passata, water or stock, paprika, chile powder and oregano. Bring to the boil and simmer for 10-15 minutes or until the vegetables are all tender. 4. Add the fresh herbs and season, to taste with salt and black pepper. Simmer for 2 minutes and serve.
