Guest guest Posted February 19, 2002 Report Share Posted February 19, 2002 * Exported from MasterCook * Spicy Lentil and Aduki Bean Soup Recipe By :Barbara Cousins Serving Size : 4 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ounces aduki beans -- or 1 cup when cooked 2 1/2 cup water or stock -- plus 3 3/4 cups water or stock -- divided use 1 large onion 1 large carrot 2 ounces sweetcorn 2 ounces red split lentils 14 ounces canned chopped tomatoes 1 tablespoon chopped fresh basil 1 tablespoon chopped cilantro 1 tablespoon chopped fresh mint 1 tablespoon chopped fresh parsley 1 garlic clove 1 piece fresh ginger (1/2-inch) 1 small red or green chile pepper -- deseeded or double the fresh ginger 1 orange -- juiced 2 teaspoons lemon juice salt and freshly ground black pepper 1. Cook the beans in lesser amount of water or stock until soft. This will take approximately 40-60 minutes, depending on the age of the beans. Soak the beans first to shorten the cooking time, if desired. After cooking there should be approximately the water or stock should reduce by half. Add more water, if necessary, to make up this amount. 2. Finely dice the onion and carrot and add to the beans along with the sweetcorn, lentils, chopped tomatoes and the remaining water or stock. Bring to the boil and simmer for approximately 20 minutes or until the lentils are soft. 3 Place the basil, cilantro, mint, parsley, garlic, ginger, chile, orange juice and lemon juice in a food processor and process until smooth. If you do not have a food processor, chop everything as finely as possible and then mix with the orange and lemon juice. 4. Add the mixture to the soup. Bring to the boil, simmer for 2 minutes, then season, to taste with salt and black pepper and serve.
