Guest guest Posted February 19, 2002 Report Share Posted February 19, 2002 * Exported from MasterCook * Spicy Seared Portabella Mushrooms Recipe By :Dreena Burton Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon hoisin sauce 1 teaspoon tamari soy sauce 1/2 teaspoon dark soy sauce (or another 1/2 tsp tamari) 1/4 teaspoon chipotle hot sauce -- (or other hot sauce) (1/4 to 1/2) 1 1/2 pounds portabella mushrooms -- " gills " removed, sliced into 1 " pieces 1/2 teaspoon olive oil -- (1/2 to 1) couple pinches sea salt couple pinches fresh ground black pepper 1 cup green onions -- (mostly green portion), cut into 1 " strips Sidebars: Don't overcook these portabellas; they are best when they are still " meaty " and plump, with their natural juices sealed in. Serve these mushrooms over baked yams! Bake yams in their skins until soft, then slice lengthwise and top with the mushrooms (start cooking the mushrooms once yams are already soft). The sweetness of the yams is a nice contrast to the spiciness of the mushrooms. You could also use these mushrooms in a simple fresh pasta dish (tossed with olive oil, lemon juice, and cilantro, for instance), or on top of " Parmesan Toasts, " (p. 67), or to top " Savory Tofu Burgers " (p. 116). In a large bowl, mix hoisin sauce, tamari, soy sauce, and hot sauce. Add mushrooms and gently toss to coat evenly in a large, preferably deep skillet, heat the oil on high heat and season with sea salt and black pepper. Add mushrooms and allow one side to sear for a couple of minutes, then flip to sear the other side. Add green onions and just lightly cook them. Toss mushrooms again, then remove from heat.
