Guest guest Posted February 19, 2002 Report Share Posted February 19, 2002 * Exported from MasterCook * Apple Swirl Loaf Recipe By :Dreena Burton Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Apple Mixture: 1/2 cup apple -- cored, peeled, and diced 1 teaspoon lemon juice 1/4 cup unsweetened applesauce 1/4 cup unrefined sugar 1 teaspoon cinnamon 1/8 teaspoon allspice Batter: 1 1/2 cups whole wheat pastry flour (or 3/4 cup each whole wheat flour and unbleached all-purpose flour) 1/2 cup ground oats -- see sidebar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon cinnamon couple pinches sea salt 3/4 cup vanilla or plain soy milk 1/2 cup pure maple syrup 2 teaspoons pure vanilla extract 1 tablespoon canola oil Sidebar: Use a food processor to grind the oats. I use " quick oats " and process them until the consistency is close to a coarse flour. Preheat oven to 350F. In a bowl, toss apples with lemon juice, then add remaining apple mixture ingredients, mix, and set aside. In a large bowl, combine dry ingredients, sifting in baking powder and baking soda. Mix well. in another bowl, combine soy milk, maple syrup, and vanilla. Add this wet mixture to dry mixture. Mix until just combined, then stir in canola oil, again until just mixed. Add apple mixture to batter, using a knife to swirl it lightly into the batter (don't mix through, just swirl in a little). Pour into a lightly oiled 9 " x5 " loaf pan. Bake for 43-45 minutes, until golden brown and a toothpick inserted in the center comes out clean. For 10 loaf slices, per slice: Calories: 170; Total Fat: 2.4 g (Sat.
