Greens With Goat Cheese And Grapes

1 cup watercress leaves

1 cup red cabbage -- thinly shredded

1 cup seedless red or green grapes

3 tablespoons crumbled goat cheese -- to taste, up to 4

8 leaves red-leaf lettuce -- torn

***DRESSING***

3 tablespoons reduced-fat mayonnaise

OR soy mayonnaise

1/2 lime -- Juice of

1/2 teaspoon honey

 

6 servings

 

The pungent cheese, contrasted with the sweetness of grapes, offers the

palate a pleasant surprise.

 

Combine the salad ingredients and toss together. In a small bowl, combine

the dressing ingredients and stir together. Pour over the salad just

before serving and toss well.
