Guest guest Posted February 18, 2002 Report Share Posted February 18, 2002 * Exported from MasterCook * Super Stuffed Mushrooms Recipe By :Dreena Burton Serving Size : 5 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 large button mushrooms -- (14 to 16) stems trimmed and reserved 1/2 cup good quality breadcrumbs -- (reserve 1 tbsp for topping) 1/8 cup fresh parsley -- chopped 1/8 cup celery -- finely chopped 1 1/2 tablespoons soy parmesan -- (1 1/2 to 2) 1 tablespoon tomato paste 2 teaspoons balsamic vinegar 1 small garlic clove -- finely minced 1/2 teaspoon tamari or soy sauce 1/2 teaspoon dried mustard 1/2 teaspoon dried oregano 1/4 teaspoon chili powder sea salt to taste fresh ground black pepper to taste Preheat oven to 400F Remove stems from mushrooms and reserve. Place mushrooms caps with hole side up on a baking sheet lined with parchment paper. Bake for 8-9 minutes until the caps have collected some juice from the mushrooms. Remove and let cool a little. Soak up the juices with a cloth or paper towel, or tip the caps upside down, discarding the juices. For the filling, mince the mushroom stems and combine in a bowl with all the remaining ingredients (except the reserved breadcrumbs for the topping). Work the mixture until it starts to come together, binding a little when pressed. For a tighter mixture, add a little more tomato paste. Spoon filling into mushroom caps. Sprinkle on the reserved breadcrumbs and, if you wish, a little extra soy parmesan, pressing it lightly onto the stuffing. Bake at 400F degrees for 10-12 minutes until lightly browned.
