Must be before they are brined...cause they look purple when I buy em. LOVE EM!!! Anyway, here is a way to use green beans!! ~ Brenda * Exported from MasterCook * Fusilli w/Green Beans And Black Olives Recipe By :The Complete Book Of Pasta And Noodles Serving Size : 4 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound green beans -- ends snapped off and cut into 1/2-inch lengths salt 1/4 cup extra-virgin olive oil 1/2 medium onion -- minced 1 medium garlic clove -- minced 1/2 cup black olives -- such as kalamata, pitted and coarsely chopped 1 teaspoon minced fresh thyme leaves ground black pepper 1 pound fusilli -- or other short curly pasta 1/4 cup grated pecorino cheese * Fusilli -- the spiral shaped pasta 1. Bring 4 quarts of water to a boil in a large pot. Add the beans and 1 tablespoon salt and cook until tender, about 3 minutes. Remove with a slotted spoon and set aside. Leave the water at a boil. 2. Heat the oil in a large saute pan over medium heat. Add the onion and cook until softened, 3 to 4 minutes. Add the garlic and cook another minute. Stir in the beans, olives, and thyme and cook until the beans have absorbed some of the flavors and are heated through, 2 to 3 minutes. Adjust the seasonings with salt and pepper to taste. 3. Add the pasta to the boiling water. Cook until the pasta is al dente. Drain the pasta and return it to the cooking pot' Add the bean mixture and cheese and toss to combine. Divide among 4 pasta bowls and serve immediately.
