Guest guest Posted February 15, 2002 Report Share Posted February 15, 2002 * Exported from MasterCook * Baked Marinated Tofu Recipe By :Karen Hubert Allison Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces raw firm tofu 1 1/2 tablespoons honey -- diluted in 2 tablespoons boiling water 1/4 cup shoyu 1 teaspoon lemon zest 1/3 cup sherry 3 cloves garlic -- minced 3 tablespoons minced onion -- or onion pureed in a processor 2 tablespoons Thai peanut sauce -- optional 2 tablespoons toasted sesame oil 1 tablespoon pureed sun-dried tomatoes 3/4 cup boiling water Baked tofu, often called teriyaki tofu, is available in natural food stores and some supermarkets throughout the country. It is generally sold in small, thin blocks. It is made from firm tofu that is pressed for greater firmness and then marinated in a soy-based marinade and baked. The store-bought product is excellent, and firmer than what you can make at home. Still, it costs less to prepare your own version, and you can vary the flavor of the marinade. This tofu is great for sandwiches, spreads, pates, stews, and gratins, and adds a dense, rich, almost smoky flavor to a dish. Cut the tofu into 1-inch-thick slices and place them in a shallow baking dish, preferably with a nonstick surface Combine the rest of the ingredients in a saucepan and bring to a simmer. Pour the marinade over the tofu. if possible, marinate for 2 to 4 hours, turning the slices. Bake at 325 degrees for 45 minutes to 1hour or until the marinade has thickened on the tofu and any liquid in the baking dish has been absorbed. The tofu is then ready to use.
