Maple Banana Loaf

3/4 cup whole wheat pastry flour

1 cup Kamut or more whole wheat pastry flour -- see directions

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon freshly grated nutmeg

couple pinches sea salt

1 cup very ripe banana -- mashed

1/2 cup pure maple syrup

1/2 cup vanilla or plain soy milk

1 teaspoon pure vanilla extract

1 tablespoon canola oil

 

If using more whole wheat pastry flour instead of Kamut, you may need a couple

of extra tablespoons of soy milk to lighten the batter.

 

For a little decadence, try 1/4 cup of non-dairy chocolate chips (add in with

the dry ingredients). Also try adding 1/4 cup toasted nuts, such as pecans or

walnuts.

 

Preheat oven to 350F. In a large bowl, combine dry ingredients, sifting in

baking powder and baking soda, Mix well. In a separate bowl, combine mashed

banana with maple syrup, soy milk, and vanilla extract. Mix well, then add to

dry mixture. Stir through and add canola oil just as mixture starts to come

together. Mix until just combined (do not overmix). Pour into a lightly oiled

9 " x5 " loaf pan and bake for 45-50 minutes, until golden brown and a toothpick

inserted in the center comes out clean,

 

For 10 slices of loaf (using only whole wheat pastry flour), per slice Calories:

161 Total Fat: 2 g (Sat. Fat: 0.1 g); Cholesterol: 0 mg; Carbohydrate: 32.8 g;

Fiber: 2.2 g; Protein: 3 g.
