Guest guest Posted February 11, 2002 Report Share Posted February 11, 2002 xpost: mc-recipes, veg-recipes * Exported from MasterCook * Glamorgan Sausages or Vegetarian Welsh Potato Logs Recipe By :Rosemary Moon Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup leeks -- trim, finely slice 1 tablespoon oil 1 cup cold mashed potato 1 cup grated old cheddar cheese salt and black pepper 1 teaspoon dijon mustard 1 tablespoon freshly chopped parsley 1 cup fresh whole-wheat bread crumbs 2 tablespoons olive oil (2-3) 1. Cook the leek in the oil until soft but not browned, then mix with all the remaining ingredients, except the oil, adding sufficient bread crumbs to make a very stiff dough. Divide into 8 then shape into sausages, flouring your hands to make it easy to handle the mixture. 2. Heat the oil in a skillet; add the sausages and cook quickly for 6 to 8 minutes, turning carefully to brown on all sides. Serve with a spicy fruit chutney or relish.
