Guest guest
Here is an easy, yet impressive recipe to serve for Valentine's! The tofu really soaks up the flavors from the basil and tomato. Tofu, Tomato & Basil Brushetta 4 slices from a crusty Italian or French loaf 2 oz firm tofu 1 medium tomato, seeded and chopped 1/2 cup chopped fresh basil leaves 1 clove garlic, minced 1/4 tsp dried thyme 2 Tbs olive oil extra olive oil, to drizzle on bread To prep the tofu, place the tofu on cutting board lined with wax paper, top with more wax paper, weight and drain for 15 minutes.. Once drained, slice the tofu into 1/4 " cubes. For the topping, heat the 2 Tbs olive oil in a pan and add the garlic. Heat for 30 seconds, add the tofu and thyme and heat until tofu is slightly browned. Remove from heat and place garlic, tofu and oil (from the pan) in a bowl. Add the tomatoes and basil and toss until blended. Meanwhile, toast the slices of bread in your oven or broiler until light golden. Drizzle extra olive oil on each slice of toasted bread. Top with the mixture and serve. Enjoy, Catherine http://www.soyfoodkitchen.com
