Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 cake tofu -- pressed

1 tablespoon light miso

1 tablespoon unbleached white flour

1 teaspoon kuzu or cornstarch -- dissolved in 1 teaspoon cold water

1/2 teaspoon dark sesame oil

Jonathan Kline worked at Moosewood for many years and then went on become an

Ithaca tofu maker. Tofu Dumplings make a simple miso hearty. Use them in any

soup or stew as you would other dumplings.

Mash the pressed tofu. Squeeze out any excess water through a sieve or

cheesecloth. Mix the tofu, miso, flour, and dissolved kuzu or cornstarch. Add

the sesame oil. Shape into small balls, about 1 1/2-inches in diameter. Drop the

dumplings into simmering soup or stew and gently simmer for 10 to 15 minutes.

Stir occasionally.
