Bariani's Spinach Salad

Amount Measure Ingredient -- Preparation Method

1 pound spinach leaves, torn

5 ounces cremini mushrooms -- thinly sliced

1 small red onion -- sliced t hin

2 ounces gorgonzola -- crumbled

1 clove garlic -- minced

1 teaspoon thyme leaves

1/3 cup extra virgin olive oil

2 tablespoons red wine vinegar

Kosher salt

Black pepper in a mill

 

Put the spinach in a large salad bowl, and add the mushrooms, onion, and

gorgonzola. In a small bowl, whisk together the garlic, thyme, olive oil, and

vinegar, and season with salt and pepper. Pour the dressing over the spinach

mixture, and toss gently. Add several more turns of pepper, and serve

immediately.
