Stuffed into pita bread, Soyfalafel is street food, something to eat on the go. When made the traditional way with cooked garbanzo beans, preparation is a long process. Our version, using tofu, is much faster, equally delectable, and lighter and higher in protein. In a large bowl, mix together all the ingredients. Form into 1-inch balls and bake at 350F on an oiled baking sheet for about 30 minutes. The balls should be golden and a little crusty on the outside, but still moist inside. Serve with Tahini-Garlic Dressing (p. 59). Soyfalafels make excellent appetizers and are also delicious stuffed into toasted pita bread with shredded lettuce, chopped tomatoes, cucumbers, and dressing.
