Guest guest Posted February 6, 2002 Report Share Posted February 6, 2002 * Exported from MasterCook * Herbed Potato and Yam Fries Recipe By :Dreena Burton Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Potato Fries: 2 pounds all-purpose potatoes -- peeling optional,, cut in 1/2 " strips 1 1/2 tablespoons olive oil -- (1 1/2 to 2) 2 teaspoons dried oregano 1 teaspoon dried basil 1 teaspoon dried dill -- (or 1/2 teaspoon dried thyme) 1/2 teaspoon onion powder -- optional 1/8 teaspoon chili powder 1/4 teaspoon sea salt Yam Fries: 3 large yams -- (3 to 4) (about 2 lbs.), peeled, cut into 1/2 " strips 1 1/2 tablespoons olive oil 1 tablespoon dark soy sauce 2 teaspoons dried basil 1 teaspoon dried oregano 1 teaspoon dried coriander -- (or more basil and oregano) 1/4 teaspoon chili powder These are delicious, fat-reduced fries, and the seasonings are flexible. If fat content is not a big concern, a little extra oil for the potato fries makes them even more delicious. Bake the potato and yam fries separately on baking sheets and serve together. FOR THE POTATO FRIES: Preheat oven to 400F. In a large bowl, mix all ingredients. Transfer to a baking sheet lightly cited or lined with parchment paper. Bake for 45-50 minutes, flipping after about 20 minutes, until tender and lightly browned. if also baking yam fries, rotate sheets halfway through baking. Season with additional salt and pepper if desired. FOR THE YAM FRIES: Same directions as above. Both types served together will make 4-6 servings as a side dish.
