Vietnamese Braised Bean Curd

Amount Measure Ingredient -- Preparation Method

31 1/2 ounces reduced-fat silken tofu firm -- (3 -10.5 oz. pkgs)

OR extra-firm silken tofu

OR 2 lbs. reduced-fat firm regular tofu

OR medium-firm tofu

2 cups water or vegetarian broth

1/4 cup Chinese brown bean sauce

2 tablespoons sugar or alternate sweetener

1/2 teaspoon black pepper

4 cloves garlic -- minced

2 tablespoons Sesame Meal

(see separate recipe)

 

This is a simple but very tasty way to serve tofu.

 

Preheat the oven to 400F. Cut the tofu into 1/2 " cubes, and cook in a

nonstick skillet over medium heat until the cubes are golden brown on all

sides.

 

Combine the water or vegetarian broth, bean sauce, sugar, and pepper in a

small bowl, and set aside.

 

In a heavy skillet or wok lightly oiled with Sesame oil, steam-fry the

garlic over high heat for a few seconds. Add the sauce and the Sesame

Meal, and bring to a boil. Add the tofu, cover, and simmer over low heat,

stirring occasionally, for 20 minutes.

 

Serves 6 to 8
