I tried this not long ago -- but I used orange juice, dates and pistachios.

Heated gently to soften then chopped it all in the cuisinart. This recipe is

for ONE serving... I doubled it and used it as a condiment for lentils. nice!

Date Spread and Crushed Pistachios on Mixed Grain Bread

Amount Measure Ingredient -- Preparation Method

1/3 cup chopped dates

1 tablespoon water -- see variation

1 tablespoon chopped pistachio nuts

or pumpkin seeds

2 slices mixed grain bread -- for sandwich

 

Make the date spread by gently heating 1/3 cup chopped dates with 1 tablespoon

water until soft, then beat until smooth and let cool. Add 1 tbs chopped

pistachio nuts or pumpkin seeds. Spread this over two slices of mixed grain

bread and press together.

 

TESTED: Substitute orange juice or lemon juice for the water and heat gently.

Add chopped cilantro and serve as a condiment for rice and lentils
