Brie and Fruit Chutney on Whole Grain

2 ounces Brie

2 slices whole-grain bread

1 tablespoon chutney

 

If you make this with gloriously ripe, runny Brie, you can spread it, including

the rind, on the slices of bread, allowing 2 ounces for each sandwich. Spoon 1

tablespoon sweet and spicy peach, apricot or mango chutney on top and press the

slices of bread together.

 

VEGAN - instead of Brie you can use grated vegan cheese; you will need to spread

the bread with pure vegetable margarine and use plenty of chutney.
