Peanut Butter, Grated Carrot, Bean Sprouts on Whole-Grain

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 slices whole-grain bread

1 1/2 ounces peanut butter -- see tip

grated carrot

bean sprouts

or alfalfa

 

Spread two slices of whole-grain bread with peanut butter. TIP - If it is

difficult to spread, soften it with a few drops of hot water.

 

Top one slice with some grated carrot and beans sprouts or alfalfa, then press

the other slice on top.

 

ALT: Replace nut butter with tahini. Watercress is another option, or some

sliced tomato and chopped scallion if you are going to eat the sandwich almost

immediately.
