Creamy Onion Soup: The Most Comforting Soup in the World

1 tablespoon olive oil

1 pound onions -- sliced

1 1/2 pounds potatoes -- peeled; 1/2-inch pieces

5 cups water

freshly grated nutmeg

salt and black pepper

 

1. Heat the olive oil in a saucepan. Add the onion, cover the pan and cook very

gently until the onions are really tender but not browned; about 15 to 20

minutes.

 

2. Meanwhile, put the potatoes in another saucepan with the water. Bring to a

boil and cook until very tender. Then put the potatoes with their cooking water

and a big spoonful of the cooked onion into a blender or food processor and

blend to a smooth cream.

 

3. Mix the potato cream with the remaining onions, adding a little more water if

necessary to give the consistency you want in a soup. Season to taste with

plenty of freshly grated nutmeg, salt and pepper. Reheat gently and serve hot.

going get tough and this is one of mine (Authors). It's soothing when you have

a cold or feel unwell; it is also uplifting when you are feeling low. It's

quick and easy to make from the most basic cupboard ingredients, so don't be put

off by the rather unusual method involving two saucepans. [The subtitle is used
