I'm sending this recipe as a quick idea for those of you who can cook tofu. * Exported from MasterCook * Zucchini Bean Curd Omelet 3tps Recipe By :Rose Elliot Serving Size : 2 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 small zucchini 1 teaspoon toasted sesame oil -- or more as needed or olive oil 8 ounces tofu (bean curd) (8-10-oz) -- (1 package) 2 tablespoons soy sauce 1/4 teaspoon turmeric 1 tablespoon snipped fresh chives salt and black pepper fresh parsley (optional) -- for garnish 1. cut the zucchini into thin slices (1/8-inch thick). Heat oil in non-stick skillet and add the zucchini slices in a single layer. Let cook over low heat while you prepare the next step. 2. Drain the bean curd, break or cut it into chunks and place in a food processor with soy sauce, turmeric, chives and some freshly ground pepper. Whiz to a thick, creamy consistency. Taste and add a little salt if necessary. 3. Turn the zucchini slices over then pour and spread the bean curd mixture over the top of them. The base will brown and set but will tend to stick to the bottom of the pan so you will need to ease it away gently as it cooks. Once the base is done (darkly browned), flip one half of the omelet over the other in the pan. Carefully lift it out, cut in half and serve.
