Vegan Gravy / Rose Elliot's

Amount Measure Ingredient -- Preparation Method

1 onion -- chopped

2 tablespoons whole-wheat flour

4 teaspoons gravy powder (meat free) -- see tip

2 garlic cloves -- minced

2 1/2 cups water

1 tablespoon soy sauce

salt

black pepper

 

Heat oil in a medium saucepan, then add the flour and stir for a few minutes

until the flour becomes nut brown in color. Remove from the heat and stir in the

gravy powder and garlic.

 

Return to the heat and gradually add the water, stirring all the time, until

thick and smooth. Add soy sauce, salt and pepper.

 

REVIEWER'S VARIATIONS: try adding a diced red pepper (or a handful of cashew

nuts), slices of mushroom and a dash of red wine.

 

TIP - Do not use gravy granules. Read the ingredients of the gravy powder to

check it is meat free.

NOTES : A really tasty thin gravy which freezes well. If, however, you prefer a

thick gravy, simply adjust the amount of liquid you use until it is just how you

like it. I like to freeze the gravy in convenient small portions, so I always

have some to hand for gravy lovers.
