Wild And White Mushrooms In Curry Sauce

Amount Measure Ingredient -- Preparation Method

1/4 cup white wine or apple juice

2 teaspoons olive oil

2 large garlic cloves -- minced

1/2 teaspoon curry powder

1/4 teaspoon grated ginger

4 cups sliced domestic white mushrooms

2 cups sliced wild mushrooms

such as chanterelles

Salt

 

Serves 4.

 

This easy side dish will bring elegance to your weeknight dinners.

 

Combine wine and oil in 10-inch nonstick skillet and bring to simmer over

medium-high heat. Add garlic, curry and ginger and cook, stirring

frequently, 2 minutes. Do not let mixture brown.

 

Add both mushrooms and stir well. Reduce heat to medium and cook until

mushrooms soften and begin to exude moisture, 5 to 10 minutes. Increase

heat to medium-high and cook, stirring, until mushrooms brown slightly and

are very fragrant, 2 to 3 minutes. Add salt to taste.
