Mushrooms En Papillote

Recipe By : Healthful Cooking with Mary Carroll, Star Tribune, 1/31/02

Serving Size : 6 Preparation Time :0:00

Categories : Side Dishes Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 pound white mushrooms

22 tablespoons chopped garlic

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 tablespoon olive oil

1 tablespoon chopped parsley

Serves 6.

This easy recipe from Jacques Pepin intensifies the flavor of white

domestic mushrooms. I've adapted it for simpler preparation and less fat.

Preheat oven to 400 degrees. Wash and pat mushrooms dry. Place them whole

in center of 16-inch square of foil. Add garlic, salt and

pepper. Sprinkle with oil. Fold up edges of foil to form packet.

Bake 45 minutes or until mushrooms are very soft. Sprinkle with

parsley. Serve with cooking juices.
