Guest guest Posted February 4, 2002 Report Share Posted February 4, 2002 * Exported from MasterCook * Teriyaki Salad With Tofu Recipe By : Healthful Cooking with Mary Carroll, Star Tribune, 1/24/02 Serving Size : 1 Preparation Time :0:00 Categories : Salads, Main Dish Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup low-sodium soy sauce 2 tablespoons olive oil 2 teaspoons packed brown sugar -- or to taste 2 teaspoons grated fresh ginger 6 garlic cloves -- finely minced 1 red bell pepper -- chopped 1 cup chopped broccoli florets 1/2 cup chopped carrots 2 green onions -- chopped 3 tablespoons chopped flat-leaf parsley 4 ounces extra-firm tofu -- cubed Serves 4. This Japanese-style marinade works especially well for tofu. In medium bowl, combine soy sauce, oil, brown sugar, ginger and garlic. Add bell pepper, broccoli, carrots, green onions and parsley. Toss well to coat vegetables with marinade. Add tofu and toss gently. Let stand at room temperature 30 minutes, stirring occasionally.
