Guest guest Posted February 4, 2002 Report Share Posted February 4, 2002 * Exported from MasterCook * Mediterranean Marinated Salad Recipe By : Healthful Cooking with Mary Carroll, Star Tribune, 1/24/02 Serving Size : 6 Preparation Time :0:00 Categories : Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup water 1/2 cup fresh lemon juice 2 tablespoons olive oil 2 garlic cloves -- pressed 1/4 teaspoon ground black pepper 1 yellow bell pepper -- chopped 1 red bell pepper -- chopped 1 cup chopped broccoli florets 1 cup chopped cauliflower florets 1 cup cubed part-skin mozzarella cheese 1/4 cup pitted minced Nicoise olives Serves 6. You can add beans, or any other protein to this easy salad. In large salad bowl, combine water, lemon juice, oil, garlic and black pepper. Mix well. Add bell peppers, broccoli, cauliflower, cheese and olives. Toss well to coat vegetables with marinade. Let stand at room temperature 30 minutes, stirring occasionally.
