1 pound potatoes -- scrubbed

1 teaspoon fennel (optional)

(or caraway or cumin seeds)

salt and black pepper

2 teaspoons olive oil -- divided

14 ounces canned baked beans

 

1. Grate the potatoes coarsely by hand or using a food processor. Add the seeds,

if using, and season well with salt and pepper.

 

2. Heat one teaspoon of the oil in a large skillet, preferably nonstick, and add

the grated potato mixture, spreading it evenly over the base of the pan and

pressing it down. Cover and cook gently for about 5 minutes, or until the

underside is golden brown and crisp.

 

3. Ease the rosti away from the skillet using a fish slicer or palette knife and

slide it out onto a large plate. Invert another plate over it and turn the plate

over, so that the rosti is now cooked-side up on the second plate. Heat the rest

of the oil in the skillet, then slide the rosti off the plate into the hot oil

to cook the second side. Cook, uncovered—to keep the cooked side crisp—for a

further 4 to 5 minutes, or until the second side is golden brown and the potato

is cooked right through.

 

4. A few minutes before the rosti is ready, heat the baked beans gently in a

saucepan. Cut the rosti into halves or wedges and serve with the beans.
