Molasses Oat Bars / Rose Elliot's

1/4 cup molasses or black treacle

1/4 cup brown sugar

8 tablespoons peanut or soybean oil

3 cups rolled oats

1/2 cup sunflower seeds

 

Set the oven to 350 degrees F. Put the molasses or treacle, the sugar, and oil

into a medium saucepan and heat gently. When the sugar has dissolved, remove

from the heat and stir in the oats and sunflower seeds. Put the mixture into a

greased shallow cake pan, 7 x 11 inches, press down, and bake towards the top of

the oven for 20-25 minutes, or until set, crisp round the edges, and the visible

oats are golden brown. Cool slightly, then mark into sections with a knife and

leave in the cake pan to cool completely.

NOTES : These healthy oat bars, sometimes called blackjacks, are made with

molasses or black treacle for extra iron, calcium, and B vitamins. Use ordinary

rolled oats, not the 'jumbo' type from health food stores as they are too chewy

for this recipe which is quite chewy enough as it is. Suitable for freezing.
